a panini + some fries

i mentioned in monday’s post that part of my “resolution” is to wear, cook, and make some of the things i pin on pinterest. initially it seems like a pretty daunting task – considering i’d need oodles of time and a boat load of money – both of which i do not have. however, with 2013’s DO attitude, i’m determined to make shit happen.

so here it is – my first attempt.
caprese paninis and gwyneth paltrow’s no-fry fries

you’ll need:
mozzarella cheese
balsamic vinegar
olive oil
sea salt
2-3 large russet potatoes
panini press {we used a george foreman grill}

heat oven to 450. cut your potatoes in half horizontally, then cut each half into 1/3 inch thick fries. place in a bowl of cold water for 5-10 minutes {?}, then remove and dry thoroughly. toss with olive oil, spread on a cookie sheet and sprinkle with salt. roast until browned and cooked through – turning occasionally, 25 mins.

*the recipe suggests to peel the potatoes, but i didn’t. also, i cut up 3, so it took much longer than 25 mins to cook. just make sure you have one layer on the cookie sheet and you’ll be fine.

they were good! and only 175 cals/per serving.

fire up the press or george foreman. brush olive oil on the outsides of the bread. turn over and start layering – basil, tomato, balsamic, slices of mozzarella – and voila! ready for the press. cook until bread is toasted with beautiful grill marks and your cheese is nice and melty.

delicious! mark ate two. taylor wasn’t interested in the combo, so i made him a turkey and colby jack cheese panini. which is a quick and easy option for the kiddos!

overall, this was a great meal and pretty healthy! we’ll definitely put it in our dinner menu rotation.

  1. yumm, that sounds so good! That combination of fresh basil, tomato and mozzarella is so popular in Italy. I haven’t had it in years, I will be trying this fun twist with balsamic. :-)

  2. I like this resolution! It is so easy to get caught up in pinning that you forget to actually leave to computer to put your inspiration to work. Also, you mentioned a while ago how you spent the weekend cleaning out your pinterest boards … yeah, I totally do that too. =)
